These tasty Chocolate Orange and Ginger Biscuits were a request from my Dad. He was in one of his gluten-free phases, but was wanting something sweet and tasty, so I baked these up. However, once they were cooked, everyone ended up loving them, and didn’t even know they were gluten-free!
A rich chocolatey taste, paired with classic orange, and a subtle hint of ginger are the prominent flavours of these tasty biscuits. For a simple decoration, I baked them topped with some orange slices (the zest is used in the biscuit dough, so no waste!), which creates a super easy but gorgeous finish.
Ingredients for these Chocolate Orange and Ginger Biscuits
I made these Chocolate Orange and Ginger BIscuits with rice flour to make them gluten-free. This does give a slightly more crumbly texture than regular flour, but adds a little crunch which I really like. However, I’m fairly certain they would work with equal amounts of plain flour too if you aren’t worried about being gluten-free.
Both orange zest and a little orange extract give these cookies the delicious flavour that pairs so well with the chocolate. However, if you can’t find the extract, the zest would still create that tasty flavour combination.
I used fresh ginger for an extra added kick, grated into the dough, but you could substitute this with 1/2 tsp ground ginger, or omit it completely. You would still have some amazing chocolate orange biscuits!
Options
I made these cookies into mini circle biscuit shapes – a bite-sized version of a cookie. However, you could equally roll out the dough and cut them into bigger shapes if you prefer. you might need to adjust the cooking time a little – maybe adding an extra 5 minutes or so. I would suggest doubling the mixture if you do this, if you still want 12-15 biscuits. Remember they won’t feel solid when you take them out of the oven – they need to cool to harden up a little.
I hope you get the chance to make these delicious Gluten Free Chocolate Orange and Ginger biscuits! If you like them, be sure to leave a comment and a rating letting me know what you think!
Chocolate Orange Ginger Biscuits
Ingredients
- 75 g butter softened
- 50 g golden granulated sugar (or golden caster sugar)
- 125 g rice flour (or plain flour)
- 25 g cocoa powder
- 1 tsp baking powder
- ⅓ tsp salt
- 1 orange
- ½ inch ginger
- 1 tbsp icing sugar
- 2-3 drops orange extract (optional)
Instructions
- Beat the butter and sugar together until well combined.
- Grate the ginger and the rind of the orange. Add to the butter and sugar, along with the flour, cocoa, salt, baking powder, and orange extract. Mix together with a spatula until a dough forms.
- Roll the dough into a long sausage shape, around 5cm in diameter. Cover in cling film and leave in the fridge for 30 minutes, or the freezer for 15.
- While the dough chills, prepare the orange. Cut in half, and chop into thin slices. Then cut those slices in half to give you little mini triangles. Place the pieces onto some kitchen paper, and use some more paper to press down on the pieces to release the juices and dry them out a bit. While the dough chills, heat the oven to 190°C or 170°C fan.
- Once the dough has chilled, remove from the cling film and cut into circles of around 3 mm width with a sharp knife. Add to a baking tray lined with some baking paper, leaving room in between so they can spread a little.
- Press one orange piece into each biscuit. Sprinkle a little icing sugar onto each orange piece. Place in the oven and cook for 14-16 minutes. Remove from the oven. They will probably feel squishy, but leave them to harden for 10 minutes or so. Then enjoy!
