Healthy Homemade Coleslaw

  • ½ red cabbage
  • 3 carrots
  • 1-2 large apples
  • 3 tbsp mayonnaise/greek yoghurt
  • 2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 2 tsp paprika
  • ½ tsp cayenne pepper


  • With a sharp knife, slice the cabbage into thin strips. Grate the carrot, lifting the carrot away from the grater each time, and keeping the carrot parallel to the grater so it grates into long strips (see method in pictures). Grate the apples. Add everything to a large bowl
  • Add the mayo, vinegar, olive oil and spices. Stir together to coat the ingredients. Season with salt and pepper and serve!
